You can only switch profiles when the vehicle is stationary and in P. Switching is also unavailable during certain tasks.
Locked profile?
You might need a PIN, pattern or password to unlock a profile before using it.
Press the vehicle symbol 
in the bottom bar and go to Settings.

Select your profile from the profile picker.
The vehicle switches to your profile.
